This Brine Recipe is a Gabbi’s classic and a family favorite. I’ve been using it for 15 years for holiday gatherings at home. It pairs beautifully with turkey, cornish hens, pork, and chicken. The variety of different spices give it a nice balance of earthy and holiday flavors. I hope you enjoy it as much as I do!
Gabbi’s Signature Brine
2 qts. water
1/3 cup kosher salt
1/4 cup sugar
1 tsp. thyme
3 ea. bay leaves
5 ea. whole cloves
10 juniper berries, crushed
1 tsp. anise seed
1 tsp. black peppercorns, crushed
Combine all ingredients in a saucepan. Bring to a boil, reduce heat, and simmer for 15 minutes. Cool to room temperature.
When cooled, add your protein and refrigerate overnight for 12 hours, turning occasionally for even brining. Pat dry with paper towels and roast according to your favorite recipe.
